Recipe of the Month: Lemon Dill Carrot Salad


Feed More’s Community Kitchen staff and volunteers prepare a variety of meals every day that are delicious and rich in nutrients and healthy ingredients. We’re excited to share some of our favorite recipes that our recipients enjoy through programs like Meals on Wheels, Summer Food Service Program and the Kids Cafe.

Our simple lemon dill carrot salad brings a punch of delicious flavors that you and your household can enjoy all year round!

Serves: 5


15 ¼ oz. fresh grated carrots
1 7/8 tbsp. mayonnaise
2 7/8 tsp. olive oil
2 7/8 tsp. lemon juice
1 ½ tbsp. minced parsley
1 ¾ tsp. dill
¼ tsp. salt
5/8 tsp. black pepper


  • Steam carrots until tender. About 10-15 minutes.
  • Combine mayonnaise, olive oil, lemon juice, parsley, dill, salt and pepper in large bowl.
  • Once combined, add carrots and mix together. Chill before serving.
  • Enjoy!
