Recipe of the month: white bean and tomato salad


Feed More’s Community Kitchen staff and volunteers prepare a variety of meals each week that are delicious and rich in nutrients and healthy, local ingredients. We’re excited to share some of our favorite recipes that our recipients enjoy through programs like Meals on Wheels, Summer Food Service Program and the Kids Cafe!

This tasty tomato and white bean salad is the perfect side to go along with your weeknight meals. Not only is it packed full of important nutrients but is absolutely delicious and a cinch to put together!

Serves: 5


1 can of garbanzo beans, including liquid (you can also use cannellini beans)
¼ oz. onions, chopped
½ tsp. dried basil
1 tsp. lemon juice
½ tsp. parsley, minced
1/8 tsp. garlic, chopped
1 tsp. extra virgin olive oil
1/8 tsp. red crushed pepper
7.5 oz. plum tomatoes


  • Chop tomatoes and place in a colander. Sprinkle with salt. Let stand for 1 hour.
  • In a separate bowl, combine the remaining ingredients and mix well.
  • Add tomatoes and toss gently.
  • Refrigerate until ready to serve.
