Recipe of the month: marinated summer squash salad

Feed More’s Community Kitchen staff and volunteers prepare a variety of meals every day that are delicious and rich in nutrients and healthy ingredients. We’re excited to share some of our favorite recipes that our recipients enjoy through programs like Meals on Wheels, Summer Food Service Program and the Kids Cafe.

Our marinated summer squash salad is a welcome dish in the heat of summer. Made with fresh vegetables from the Kroger Community Kitchen Garden at Lewis Ginter Botanical Garden, it is a seasonal treat soon to be a staple on the picnic table.

Serves: 5

Ingredients:

10oz. fresh yellow squash
1/2 tbsp. water
1.2oz granulated sugar
2 tbsp. apple cider vinegar
1 ¼ tbsp. canola oil
0.3oz marjoram leaves
2 tbsp. apple juice
1/8 tsp. black ground pepper

 Instructions:

  • Wash yellow squash while still whole.
  • Slice squash into ¼ inch pieces, and steam for 3-5 minutes.
  • In a separate pot, heat water to an almost simmer. Add sugar and stir to dissolve.
  • Combine remaining ingredients with sugar water to create marinade. Pour over squash and toss to mix completely.
