Recipe of the month: chuck wagon corn

Our kitchen staff and volunteers prepare a variety of meals every day that are delicious and rich in nutrients and healthy ingredients. We’re excited to share some of our favorite recipes that our recipients enjoy through programs like Meals on Wheels, Summer Food Service Program and Kids Cafe.

This easy yet delicious corn creation is the perfect blend of summer and fall. A staple recipe in our Community Kitchen, our Meals on Wheels recipients love the combination of fresh peppers and corn that creates a fresh and flavorful bite.

 

 

Ingredients

1 ¼ oz. unsalted butter
1 ½ lb. whole kernel frozen corn
2/3 oz. red onion, diced
5 oz. medium green pepper, diced
5 oz. canned pimento, diced
salt to taste

Instructions

  • Sauté butter in medium hot pan.
  • Add corn, onions, green peppers and pimento and cook for 3 minutes, stirring occasionally.
  • Reduce heat to medium and let simmer 7-10 minutes, stirring occasionally.
  • Enjoy!
