Makes 1 large loaf of banana bread
Ingredients
- 1 box yellow cake mix
- 1 (3.4 oz) package instant vanilla or banana cream pudding mix
- 2 ripe bananas, mashed
- 3 eggs
- 1 cup water
- 1/3 cup oil
- 2 tablespoons brown sugar
- 1 teaspoon vanilla extract
- 1 teaspoon cinnamon
- 1½ cups chopped walnuts
Instructions
- Preheat oven to 350°F. Lightly grease 9″x5″ loaf pan.
- In a large bowl, combine the cake mix and pudding mix.
- Add mashed bananas, eggs, water, oil, brown sugar, vanilla and cinnamon. Mix until smooth.
- Fold in chopped walnuts.
- Pour batter evenly into prepared loaf pan(s).
- Bake for about 1 hour and 10 minutes, or until a toothpick inserted in the center comes out clean.
- Let cool before slicing and serving.
Optional Add-Ins (choose one or mix and match)
- 1 cup fresh or frozen blueberries
- ½–1 cup chocolate chips
- ½ cup shredded coconut
- ½ cup dried cranberries or raisins
