Healthy and budget-friendly Valentine’s Day meals.

Valentine’s Day has always been the perfect holiday to celebrate with food. Whether it’s going out to eat or cooking at home, people love to share this heartfelt holiday over delicious Valentine’s Day meals.

We are taking inspiration from the food our own Bayard Community Kitchen creates here at Feed More and sharing some of our favorite dishes to cook for your valentine!

Appetizer
Kick your romantic meal off with a colorful layered hummus dip topped with all kinds of delicious veggies that will make it more flavorful and fun! This simple dish will take just a few minutes to put together by taking a carton of your favorite hummus and spreading it in a bowl. Layer with chopped vegetables like red onion, cucumber, olives, grape tomatoes and a little bit of crumbled feta cheese to finish it off. Serve with pita chips and enjoy!

Entrée
Lighten up a favorite Italian dish by substituting pasta for spaghetti squash. Cut the squash in half, add some olive oil, salt and pepper to each side and bake face up on high heat in the oven for a half hour. You’ll have noodles that tasty without the heaviness pasta can bring. Not to mention, spaghetti squash is packed full of great nutrients!

Dessert
We know that Valentine’s Day is the perfect opportunity to indulge on the sweets, but if you’re looking for something with a healthy component we’ve got you covered with all things chocolate dipped fruit! Choose a few of your favorites like strawberries (a classic), pineapple, orange slices and cherries that you want to cut and cover in chocolate goodness. Simply melt dark chocolate using a double boiler or your microwave, dip in the fruit and let cool in the refrigerator.
