Squash all about it!

Squash is something that the Feed More Community Kitchen team prepares often. Not only is it a versatile vegetable that can be used in all sorts of recipes all year long, but it is nutrient-rich, delicious veggie that our recipients love. From helping improve digestion to boosting bone health, and even helping with weight loss, squash of all kinds should be a staple in everyone’s diet.

While there is a squash for every season, winter seems to be the most popular time of year to enjoy these gourds, and we’ve found a few ways to help you prepare them for your own household this season!

Spaghetti Squash (hold the pasta)
Spaghetti is one of the most well-known dinners around. A little pasta and some marinara sauce makes for a delicious meal. However, pasta is no longer the only option. When roasted with olive oil and a little salt and pepper, you can pull a spaghetti squash apart into strands that look just like spaghetti pasta. Mix in some yummy vegetables like onion and green peppers with your favorite marinara sauce and you’ve got a nutritious dinner everyone will love!

Acorn Squash
Can you guess where the acorn squash got its name? From its shape of course! This smaller squash is easy to prepare because it’s already packed with flavor. Try roasting it in the oven with some butter, salt and pepper and chop up as a delicious side. It’s also a great addition to many kinds of soup, especially vegetable- perfect for this time of year.

Butternut Squash
If you’re a fan of all things pumpkin, than this may be the perfect squash for you. Try adding roasted and cubed butternut squash to a salad for a nutty and sweet taste. It also pairs perfectly with many different pastas, so include it with your favorite lasagna recipe for a health boost and amazing flavor.
